Apple recipes

There are as many recipes with this fresh fruit as there are varieties of apples.

Apple roses

Makes 8:

  • 500 g puff pastry
  • 3 tbsp cinnamon and sugar mixture
  • 1 packet of vanilla sugar
  • 2 red apples
  • 1 tbsp lemon juice
  • powdered sugar for dusting


  1. Line muffin tins with parchment paper.
  2. Unroll dough then roll out slightly thinner; cut lengthwise into 8 equal-sized strips.
  3. Mix the cinnamon and sugar mixture with the vanilla sugar and dust the pastry.
  4. Wash and core apples, then then cut into thin slices (using a mandolin slicer). Drizzle apple slices with lemon juice.
  5. Arrange the apple slices on the dough strips in slightly overlapping layers so that the peel protrudes slightly at the top and is level with the dough at the bottom.
  6. Roll up strips lengthwise to form roses; pinch dough at the bottom and place in muffin tin.
  7. Baking: preheat convection oven to 180 degrees Celsius and bake for approx. 40 minutes. Remove from oven, let cool slightly and dust with powdered sugar.

Veiled Peasant Girls

Sumptuous and delightfully easy to prepare!

For 4 to 6 glasses you will need:

  • 3 peeled apples
  • 6 tbsp sugar
  • 500 ml water
  • 2 tbsp butter
  • 6 tbsp breadcrumbs
  • 1 tsp ground cinnamon
  • 300 ml cream


  1. Peel, quarter and dice apples; cook with 4 tbsp sugar and water until soft. Mash coarsely and let cool.
  2. Melt butter and the remaining sugar in a pan. Add bread crumbs, lightly toast and caramelize. Season with cinnamon and let cool.
  3. Whip the cream. Layer the apple sauce, cream and toasted breadcrumbs in a glass and serve.

Cinnamon baked apple

No one can resist the smell of hot cinnamon apples!

For 4 baked apples you will need:

  • 4 apples
  • 100 g almond paste
  • 3 tbsp sugar
  • 1 tsp cinnamon
  • 2 tbsp raisins
  • 2 tbsp rum
  • 2 tbsp lemon juice
  • 50 g melted butter


  1. Wash apples, cut off the top and generously hollow out.
  2. Thoroughly mix almond paste, sugar, cinnamon, raisins and rum in a bowl.
  3. Divide the dough into 4 parts and stuff one portion into each apple.
  4. Brush an ovenproof dish with the melted butter. Add the apples and sprinkle with lemon juice.
  5. Bake the apples in the oven at 200 degrees Celsius (convection) for 30 minutes.

Apple Pie à la Marché

For 1 apple pie you will need:

Shortcrust ingredients

  • 250 g flour
  • 50 g sugar
  • 125 g butter
  • 1 egg
  • 1 pinch of salt
  • 2 tbsp water

Filling ingredients

  • 80 g raisins
  • 2 tbsp rum
  • 1 kg apples
  • 150 g butter
  • 120 g sugar
  • ½ tsp cinnamon
  • zest of 1 lemon

Caramel glaze ingredients

  • 70 g butter
  • 100 ml milk
  • 20 g white flour
  • 100 g sugar
  • 100 ml cream
  • 100 g cashew nuts
  • 100 g sliced almonds
  • 100 g shelled pistachios


Preparation of the shortcrust

  1. Place flour, sugar, butter, egg, a pinch of salt and water in a bowl.
  2. Knead all ingredients by hand until a dough forms.
  3. Wrap the dough in plastic wrap and let it rest in the refrigerator for at least 1 hour.

Preparation of the filling

  1. Soak the raisins in rum.
  2. Peel apples and cut them into small pieces.
  3. Melt butter in a saucepan and add the apple pieces. Heat only briefly so the apple pieces retain some firmness.
  4. Add sugar, cinnamon, lemon zest and the raisin and rum mixture to the apples and mix well.

Preparation of the caramel glaze

  1. Add butter, milk, white flour and cream to a pan and briefly bring to a boil.
  2. Roast the cashews, almonds and pistachios in another pan, then add them to the caramel. Mix well. Allow the glaze to cool completely.

Preparation of the apple pie

  1. Roll out the shortcrust and place it in a round cake pan (24 cm diameter).
  2. Add the apple mixture and evenly cover with the caramel and nut glaze. Bake at 180 degrees Celsius (convection) for 25 minutes.
